On the sixth day of Christmas

My true love gave to me yuletide slices!

Memories will come back when you see these little gems. I think the recipe was made popular in the late seventies and early 80’s. You’ll recognize them. I got this one from my mom. You still see them at the occasional church social.

Yuletide Slices
Pretty and oh so simple

4 squares semi-sweet baking chocolate
2 tbsp butter
2 tbsp milk
1/2 icing sugar
1 pkg mini marshmallows (the colourful kind)
1 pkg flaked coconut

In a microwaveable bowl melt chocolate, butter and milk on medium. When everything is smooth add sugar and blend well. Gently fold in marshmallows.

Place about 1/3 of coconut on wax paper and spoon about 1/3 of chocolate mixture and roll into 8-inch log. Make sure to completely coat with coconut. Repeat with rest of chocolate.

Wrap logs tightly and place in fridge for at least 3 hours or until firm. These can be frozen as well.

To serve cut each log into slices (about 3/4-inch to 1-inch).

Get creative: add walnuts or pecans for extra crunch!

question... so when we mix in the marshmallows it's off the stove right - we don't want the marshmallows melted. How do you roll it into a log?
